I love to cook. However I like being a smart cook. I’m busy raising a family and I value my time, so for me creating a recipe that can be turned into 2 healthy meals ticks all the boxes
Plus this one is great for the lunchbox. I hope you enjoy.
Salmon is one of those great fast and healthy dinners you can throw together in a few minutes and feed a hungry family. Salmon is an excellent source of high-quality protein, vitamins and minerals and best of all omega 3 fatty acids which lowers inflammation in the body. I always ask for an additional piece so I can turn this delicious meal into patties the next day.
- 200 grams of cooked salmon ( I added an extra piece to my cooking the night before 15 minutes 180C)
- 1 tablespoon of dried dill or 2 tablespoons of fresh dill chopped
- Pepper to taste
- 1 tablespoon of Lemon zest
- 100 grams of feta
- 2 zucchinis grated and sprinkled with salt ( I do this first and allow to sit so I can drain out the water prior to cooking)
- 1 cup flour ( I used buckwheat)
- 2 eggs beaten
- 1tbs olive oil
- coconut oil for frying
- 2 green onions finely chopped or 1/4 onion grated or green parts of a leek if you are on a FODMAP diet
- 1/4 cup corn
Squeeze out water from zucchini. Combine salmon, feta, dill, lemon zest, eggs, onion, oil and flour. Mix together well and check consistency. If it’s too wet to shape into patties add more flour. Heat coconut oil in frying pan lightly 3 minutes per side.
I like to serve mine with Tzatziki and a rocket and parmesan salad with avocado. Great for the freezer too!
